The main course—a charcoal-grilled snapper served over pickled greens and a fermented barley sauce—was both comforting and surprising. Every component had intention, and nothing was wasted or decorative for the sake of it.

Each piece was served with careful temperature control and lightly seasoned with soy or citrus to avoid the need for dipping.

Courses are timed to let you enjoy each one fully, and there’s no rush to turn over tables. I appreciated the curated sake list, which included both imported labels and local-inspired infusions.

Everything, from the pacing to the way dishes are introduced, supports EZO’s core philosophy: slow down, pay attention, and enjoy with intention.
